Preheat oven to 350o In a medium saucepan, stir together dates, raisins, prunes, apple juice and water. Bring to a boil and boil for 5 minutes. Remove from heat and stir in margarine and salt. Set aside to cool. When cook, stir in egg substitute and vanilla and mix well. In a small bowl, mix flour, baking soda together until just mixed. Add to the batter. Fold in nuts, if using. Line or spray muffin cups and fill 2/3 full. Bake 15-20 minutes or until done. Turn off oven and leave muffins in the oven for 2 minutes. Take out of the oven and remove the muffins to a rack to cool.
