1cupbuttersoftened (or 1/2 cup butter and 1/2 cup applesauce)
1cuppacked light brown sugar
1/2cupwhite sugar
2eggs
2tspvanilla extract
1-3/4cupsall-purpose flour
1tspbaking soda
3cupsquick cooking oats (increase by 1/3 or 1/2 if batter is wet)
1cupsemi-sweet chocolate chips
Instructions
In a large bowl, cream together the butter, brown sugar and white sugar until smooth. Beat in eggs one at a time then stir in vanilla. Combine the flour, baking soda. Stir into the creamed mixture until just blended. Mix in the oats and chocolate chips. Drop by heaping spoonfuls onto ungreased baking sheets. You can also bake in 2 small cake pans at 350o for 15-30 minutes. Bake for 12 minutes. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
