Layered Greek Dip

Ingredients
  

  • 6 oz plain yogurt the thicker the better such as Greek yogurt
  • 1/4 cup coarsley grated cucumber leave peel on, squeeze dry in paper towels or towel
  • 1 tbsp red onion finely chopped
  • 1 tsp fresh mint
  • 8 oz container of hummus 3/4 to 1 cup
  • 1/2 cup tomato seeded and chopped
  • 1/2 cup feta cheese crumbled, about 2 oz
  • Pita wedges

Instructions
 

  • In a small bowl, stir together yogurt, cucumber, onion and mint.  Set aside.
  • Spread hummus on a 9-10 inch plate.
  • Spread yogurt mixture over hummus.
  • Sprinkle with tomato and feta cheese.
  • Garnish with additional mint and grated cucumber if desired
