Are you looking for a light and easy breakfast? Look no further! This super simple granola fills the bill. I’ve been making this granola ever since Mom (Rose) gave it to me. The thing I like best about granola (aside from how light yet satisfying it is as a breakfast or snack) is that the recipe is so flexible you can mix and match ingredients you have on hand and discover your own personal granola recipe. I’ve split this recipe into two sections: essential ingredients and optional ones. The essential ingredients are still a little bit flexible but for the best results, I’d stick pretty close to the recipe. After that … the sky’s the limit! Let’s get right to it shall we … Granola A light, tasky, healthy breakfast. We have this for light mid-week breakfasts and can be proud to set it out for easy overnight company breakfasts. Large BowlMeasuring SpoonsLarge Cookie Tray (lined with parchment) 6 cups Large flake oats1/2 cup Butter (or oil, or combination)3/4 cup Maple syrup or honey1 tsp Vanilla1/4 tsp SaltOptional Ingredients1/4 cup Ground flax seed1/4 cup Chia seeds (whole or ground)1/2 cup Coconut (shredded, unsweetened)3/4 cup Pumpkin seeds (raw)3/4 cup Sunflower seeds (raw)1 cup Dried fruit (e.g. cranberry, raisins, blueberry, apple) Preheat oven to 225 FIn a large bowl, combine your dry ingredients, not including the fruit if using.Melt butter in microwave or on the stovetop, add maple syrup and vanilla, mix well to combine.Slowly pour the butter mixture into the dry ingredients and stir with spatula until all flakes are well coated.Spread the mixture onto the lined baking sheet and place in the oven. Bake for 10 minutes, then stir the mixture on the pan and put in for another 10 minutes.Repeat step 5 until the granola becomes toasty golden in colour. This will take 30 minutes or a little more since we're using such low heat and depending on how deep the mixture is on your pan.When completed, remove the baking sheet from the oven and allow to cool completely before adding dried fruits. Once cooled, put into an airtight container for storage. ServingFor serving, we like to combine about 1/4c of granola with a few tablespoons of your favorite yogurt. If you like granola that clusters, the only way I've been able to make that work is by drizzling warm maple syrup over the mixture as soon as it comes out of the oven, then leave to cool as usual.
