The Letter C Curry


The Letter “C” Curry

The 3 "c's" are for cauliflower, chicken and chick pea. You can make this entirely vegetarian by leaving out the chicken.
Serve with toasted pita or Naan bread, Basmati rice if you wish.
Cook Time 1 hour 30 minutes
Servings 4 servings

Ingredients
  

  • 3 tbsp oil olive, coconut, or other vegetable oil
  • 3 tbsp madras curry paste or sauce
  • 1 onion chopped
  • 2 chicken breasts cubed (boneless, skinless)
  • 1 can diced tomatoes 540 ml
  • 1 can chick peas drained and rinsed 540 ml
  • 1 whole cauliflower
  • few chopped chilies

Instructions
 

  • Add oil to a dutch oven or small stockpot.
    Add one chopped onion
    Add chicken to the pot and fry until chicken is cooked through. 
    Add one can of tomatoes (diced)
    One can of chickpeas and the whole cauliflower head.
    Add a few chopped chillies if you like a bit of extra heat. 
    Simmer for 1 and a half hours until cauliflower is cooked through and the sauce cooks down.
