Fresh Apple Cake
From Rose ArmstrongA family favourite and uses up some apples! Serve with ice cream or a nice sauce or just plain with a sprinkling of icing sugar. This batter is unlike any other batter so don't fret. The work is worth it.

- 9×13 pan
Ingredients
- 4 cups sliced apples
- 2 cups white sugar
- 2 cups all-purpose flour
- 1-1/2 tsp baking soda
- 2 tsp cinnamon
- 1 tsp salt
- 2 eggs
- 2/3 cup vegetable oil
- 2 tsp vanilla
- 1 cup chopped pecans optional
Instructions
- Preheat oven to 350oF.Peel and slice enough apples to make 4 cups and place in a large mixing bowl.Mix together sugar and add to sliced apples stirring to coat slices.Mix together flour, baking soda, cinnamon and salt. Add to sugar apple mixture. Combine well.In separate bowl combine well; eggs, vegetable oil and vanilla. Beat together well and add to apple mixture. Add chopped pecans, if using. Pour into greased 9×13 pan. Bake for 50 minutes or until cake springs back when lightly pressed.Depending on your oven it may not take 50 minutes. Check after 45 minutes.Let cool completely before removing from the pan.
