If you have a pot-luck or dinner party to attend and you’ve been asked to bring dessert, this is what you need. It’s a crowd-pleasing sweet for any occasion.
Coconut Graham Squares
From Rose ArmstrongThis is a no-bake recipe. Great for hot summer days when you want something sweet, but you don't want to turn the oven on.
Equipment
- 8×8 baking pan
Ingredients
- Graham crackers enough for an 8×8 baking pan
- 1/2 cup butter
- 1/2 cup white sugar
- 1/2 cup milk
- 1 egg beaten
- 1 cup coconut
- 1 cup graham crackers crushed finely
Frosting
- 1 cup icing sugar
- few drops milk
- two drops food colour optional
Instructions
- Line an 8×8 baking pan with graham crackers.Mix and cook the next four ingredients. Bring to a boil and remove from stove.Add 1 cup of coconut and 1 cup crushed graham wafers to the pot.Place the mixture on the graham squares in the pan. Add more graham wafers and frosting with coloured icing till just mixed but not too runny. Add a drop or two of food colouring (not blue) and spread over all. Refrigerate until set. Cut into small squares when cooled.
