Baked Fish with Pesto
Ingredients
- 1/2 cup pesto
- 3 tbsp lemon juice
- 1 carrot finely chopped
- 1 leek finely chopped
- 2 tbsp hard butter
- 2 fish filets thick firm pieces – approx. 1 kg
Instructions
- Preheat oven to 375oF.Mix pesto, lemon juice, carrots and leek together. Cutup butter in small pieces and place on the bottom of a greased 13×9 baking dish. Place fish in a single layer on top of the butter. Spread the veggie mixture over the fish fillets. Cover and bake 40 minutes or until fish flakes with a fork.
