Baked Fish with Pesto

Ingredients
  

  • 1/2 cup pesto
  • 3 tbsp lemon juice
  • 1 carrot finely chopped
  • 1 leek finely chopped
  • 2 tbsp hard butter
  • 2 fish filets thick firm pieces – approx. 1 kg

Instructions
 

  • Preheat oven to 375oF.
    Mix pesto, lemon juice, carrots and leek together. 
    Cutup butter in small pieces and place on the bottom of a greased 13×9 baking dish.
    Place fish in a single layer on top of the butter. 
    Spread the veggie mixture over the fish fillets. 
    Cover and bake 40 minutes or until fish flakes with a fork.
